## Ingredients

* 1 lb (450 g) breakfast sausage, beef, chicken or turkey
* 8 oz (225 g) cream cheese, softened
* 1 can (10 oz / 280 g) Rotel diced tomatoes and green chiles, **very well drained**
* 1½ cups (about 170 g) freshly shredded sharp cheddar
* 1½ cups (about 180 g) Bisquick or similar baking mix
* ½ tsp garlic powder
* ½ tsp onion powder
* ¼ tsp black pepper
* ¼ tsp smoked paprika, optional

**Optional for extra heat:** a pinch of cayenne, red-pepper flakes or finely chopped jalapeño.

## Method

### 1. Drain the Rotel

Drain the tomatoes and green chiles thoroughly in a fine-mesh strainer. Gently press them with the back of a spoon to remove as much excess liquid as possible.

This is important—the wetter the Rotel, the softer and harder to shape the sausage mixture will become.

### 2. Make the mixture

Preheat the oven to **375°F / 190°C** and line a large baking sheet with parchment paper.

Combine the sausage, softened cream cheese, drained Rotel, cheddar, baking mix, garlic powder, onion powder, black pepper and optional smoked paprika.

Mix with your hands or a sturdy spatula just until evenly combined.

The mixture should be soft and slightly sticky but firm enough to hold its shape. If it’s difficult to roll, refrigerate it for **15–20 minutes**.

### 3. Shape

Take about **1–1½ tablespoons** of mixture at a time and roll into balls.

Arrange them on the prepared baking sheet with a little space between each.

You should get roughly **30–36 sausage balls**.

### 4. Bake

Bake for **18–22 minutes**, until browned and completely cooked through.

Because the exact cooking time depends on their size and the sausage used, an instant-read thermometer is the best check: the centers should reach the safe temperature appropriate for your sausage. For beef sausage, aim for at least **160°F / 71°C**; poultry sausage should reach **165°F / 74°C**.

Let them rest for about **5 minutes** before serving.

## Best Dips

These are rich enough that a slightly tangy or spicy dip works particularly well. Good options include:

* Spicy ranch
* Salsa
* Sour cream with lime and herbs
* Chipotle mayo
* Honey mustard
* Guacamole

## Make Ahead

Shape the sausage balls, cover and refrigerate for up to **24 hours** before baking. They may need an extra minute or two in the oven when baked directly from the refrigerator.

For longer storage, freeze the uncooked balls individually on a tray, then transfer them to a freezer bag or container. Freeze for up to **2–3 months**.

They can be baked from frozen; simply allow additional cooking time and verify the internal temperature.

## Leftovers

Refrigerate cooked sausage balls in an airtight container for **3–4 days**.

Reheat at **350°F / 175°C** until hot throughout. An air fryer or oven works particularly well because it restores some of the browned exterior.

## A Few Important Tips

**Drain the Rotel aggressively.** Excess tomato liquid is the most common reason the mixture becomes too wet.

**Don’t overwork the mixture.** Mix only until everything is evenly distributed so the sausage balls stay tender.

**Use freshly grated cheddar if possible.** It generally melts better and integrates more smoothly than heavily coated pre-shredded cheese.

**Keep them the same size.** Uniform balls cook much more evenly.

**Don’t overbake them.** Once safely cooked through, take them out. The cream cheese helps keep the interior tender, but excessive baking will still dry them out.

## Easy Variations

For a hotter version, combine hot sausage with Pepper Jack and a little cayenne.

For something milder, use mild sausage, mild Rotel and regular cheddar.

You can also add finely sliced green onion or a little chopped cilantro for freshness.

### Yield

Approximately **30–36 sausage balls**, or around 7–9 servings at four balls per person.

The basic combination is simple but effective: **savory sausage + tangy cream cheese + sharp cheddar + acidic, mildly spicy Rotel + enough baking mix to bind everything together.** That’s really all this recipe needs.
